An “Egg”cellent Idea

As we are on this journey of trying to lose weight and becoming more physically fit, we have been focusing on what we are eating.

When it comes to eggs, Dino removes the yolk because he is concerned about the cholesterol and I usually leave the yolk in.

I came across an interesting article the other day and printed it out to show it to Dino. Honestly my first reason for even reading the article is because I hate that Dino always leaves egg yolks in my kitchen sink!

After reading the article I did a little more research and who knew we could have it both ways! It seems that the egg yolk has so many important nutrients (vitamins and minerals) and the complete egg is a great balance of fat (large egg 1.6 g. saturated fat), calories and protein.

The eye health benefits of eggs are outstanding, lutein and zeaxanthin (lowers the chance of age-related macular degeneration & cataracts), zinc (retina) and Vitamin A (cornea).  

According to the Mayo Clinic up to 10% of our calories for the day can be saturated fat (Ex. 2,000 calories a day would allow 22 grams of saturated fat). If we are mindful about how we cook the eggs it is a great addition to a healthy diet. So, no more egg yolks in my kitchen sink!
